The Dinner Rut
Ok Friends. I'm in need of your assistance. I'm in a serious cooking rut as of late! I used to be super creative and made all this good food. And lately...I'm going to be honest its a lot of popcorn, and pasta and grilled cheese sandwiches and crockpot chili. Which lets be honest are delicious - but maybe not the most nutritious situation. Don't get me wrong though I could eat popcorn and cheese for every meal for the rest of my life.
So tonight we're having some salmon and brussel sprouts...and tater tots...because you know...a meal isn't complete without some heinous starch added to it!
But seriously I need your recipes. Quick, nutritious meals, preferably that can be made small to feed a 10month old. (Salmon apparently has a weird texture, BG is not a fan!) The emphasis on quick though peeps - especially crock pot things, or things that can be cooked on weekends and frozen. Because during the week I have just about zero energy to create delicious meals.
But I really do want some new ideas because one, we need to eat, and two I miss cooking! (I know, I really do though!) And SP is tired of popcorn...trust me! Sometimes she says, "remember when you used to make good food?" And it's true! I used to make amazing stuff. But I just can't seem to get inspired.
So...leave me your best, fastest recipes! Because my family's nutrition DEPENDS ON YOU ;) No pressure!

ReplyDeleteIt is a literal life saver in my kitchen. I work full time and I have 3 kids in 3 different schools and we have a crazy dog. I love to cook too but I have to accept the reality of being short on time. This appliance saves so much time and gives you food that tastes like it cooked all day.
I love my instant pot!!!!!! Get one- Walmart it's on sale for 70

Got 12 to 15 mins and a BBQ try 3 chicken breast and 3 decent size sweet potato .
ReplyDeleteseason chicken breast with olive oil salt pepper garlic powder cinnamon and Italian seasoning. While BBQ is heating wash and cut sweet potatoes in circles and then half. When the chicken goes on the BBQ put the sweet potatoes in the boiling water cook until tender. About 12 mins. When the sweet potatoes are tender drain and save about a bowl of water and mash the sweet potatoes adding some of the boing water to right consistency. You can add some butter and bownsugar if ya like. :) I also have some great easy crock pot rescipes if ya want them
Steve and I both don't get off till about 8 pm so I totally understand the need for quick and easy!!

DeleteMy standbys that I have in my repertoire originally came from the Kraft Magazine that you could subscribe to for free. Always heaps of different flavours and simple because they would use one or more of their products. I'd mostly look for the lightened up versions or just didn't eat the whole thing myself LOL. http://www.kraftrecipes.com/
ReplyDeleteAs a working mum I also found it super helpful to plan a week out in advance and shop on the weekend for all the ingredients so each night I can either do what's listed for that night or pick another one from that week and I knew I had everything I would need before I even started. Reduces the brain strain.
